Mini Meringues

Mini Meringues

"These crunchy dainties are great with coffee or with cream for dessert. And they're low fat! Substitute 2 teaspoons instant coffee granules or 1 1/2 tablespoons cocoa for the vanilla if you like. Coffee kisses are great sandwiched together with melted white or dark chocolate. Spooned vanilla ones are good with cream and chocolate ones are good as finger biscuits with coffee."

these were easy, but I used confectioner's sugar and only needed 1/3 cup, and added 2 tbsp powdered coco. They are great, I keep them at work for that afternoon sweet tooth!!

Light, fluffy and hmmm, so moreish! And lucky for my waistline, also light on calories! I can enjoy these delectable delights and still fit into my jeans! They get my thumbs up.

I used 1/3 cup powdered sugar and they turned out great. They were a little brown, but still tasted really good.
