Original recipe yields 12 servings

Directions

  1. In a large bowl combine fresh onion juice, olive oil, lime juice, saffron, salt and pepper. Mix in the cubes of chicken. Cover, and store in the refrigerator overnight.
  2. The next day, slide the cubes of chicken onto skewers for grilling. Brush each side with melted butter.
  3. Cook on the grill over medium heat until the chicken turns golden brown.

Here is another good Persian recipe! You can't go wrong with this. Remember...the longer you marinate the better!

I love saffron, and this recipe was divine. I served it with an herbed rice pilaf, and it was super delish. I marinated overnight, and suspect the longer it marinates, the better it tastes. Helpful hint: I made the onion juice by chopping an onion and then squeezing the juice out with my potato ricer. It worked pretty well.
