Original recipe yields 8 servings
Directions
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 5 minutes. Drain and set aside to cool. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- In a cast iron skillet, heat oil over medium heat. Add onions and cook slowly, stirring occasionally, until onions are soft.
- Stir in eggs, drained potatoes, ham, salt and pepper. Cook until eggs are firm on the bottom, about 5 minutes. Top frittata with shredded cheese and place in preheated oven until cheese is melted and eggs are completely firm, about 10 minutes.

"This was a very good recipe. I had to impravise when it came to the cast iron skillet.. I used a regular skillet and then flipped the ingredients into a pie dish added the cheese and baked about 15-20..." See more minutes at 325 degress. It was a hit with everyone! I have had weight loss surgery and some foods are hard for me to eat this sat very well with me... The only thing I would do different is make the CUBE size of the potatoes SMALL... I did mine med to large because the recipe did not really say! Next time instead of ham I think I might try adding Carne Adavoda (pork cooked in red chili)! Yummy!"
