Directions

  1. Bring the brown rice and water to a boil in a saucepan. Stir the lime juice into the rice, reduce the heat to medium-low, and cover; simmer until the rice is tender and the liquid has been absorbed, 45 to 50 minutes.
  2. Stir the cilantro and mango into the cooked rice to serve.

Easy and delicious recipe. My kids ate several helpings. You can make it with sticky, white rice as well. Very delicious; the cilantro and mango make a delightfully refreshing combination. We couldn't get enough.

I added some cooked turkey and chicken stock plus an extra mango. I also added another tbsp. of lime juice.

This rice was good. Not great. I made it with Jasmine rice - but that was the only change. Could have used a little more lime juice to enhance the lime flavor.
