Directions

  1. Lightly grease a popover pan and refrigerate. Beat together eggs and milk. Mix in flour and salt and stir until moistened. Ignore any lumps in the batter. Pour batter into chilled pan.
  2. Place pan into cold oven. Heat oven to 450 degrees F (230 degrees C) and bake for 30 minutes, or until popovers have set.

The other recipe I use of consists of the same ingredients and amounts, but, the pan is preheated in a 450 oven,..." See more then the batter is added, then they are baked for 15-20 minutes at 450, lower the temp to 375, then bake for 15-20 minutes more. You won't believe the difference, they are super super high, light, crispy yet fluffy."
