“Jazzed-up baked potatoes on the grill with a savory flavor. Super-simple, super-tasty too. Nothing says summer like fresh herbs.” - by RICKYB
Original recipe yields 4 servings
- Preheat grill for high heat.
- Puncture potatoes on all sides with a fork. Coat each potato with olive oil, and season with salt and pepper. Place each potato on the end of a separate sheet of aluminum foil. Crush thyme and rosemary sprigs by hand, and place 2 sprigs of each and 1/4 of the crushed garlic next to each potato. Roll potatoes and herbs in the foil and fold over sides to seal.
- Place potato packets on the preheated grill, and close lid. Cook 40 minutes, turning occasionally, until tender.

I think next time though in order to get more of the garlic and herb flavor to come through I might use a foil pan and cube the potatoes then toss them with the olive oil, garlic, herbs and kosher salt and then cook them on the grill."

See more love my microwave, it has a baked potato button & they "bake" perfect) so I sprayed them with pam cooking spray (instead of the oil) and wrapped them with the other ingredients in waxed paper. The rosemary was very distinct, so I may cut it in 1/2 next time. Thanks Rick!"
