Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Saute lamb and onion in a large skillet over medium high heat for 4 to 5 minutes; when lightly browned, stir in tomatoes, beans and mushrooms. Add 1/2 of the salsa and cook all together until heated through.
  3. Spoon mixture onto tortillas, dividing evenly; roll up tortillas and place in a lightly greased 9x13 inch baking dish. Spread remaining salsa over the top and sprinkle with cheese.
  4. Bake at 350 degrees F (175 degrees C) for 30 minutes, or until cheese is melted and bubbly.

My husband is a fan of Tex-Mex and Mexican food, but I am not. I used ground beef in this recipe, and the mild flavor of the dish makes it a great compromise. We both really loved it and I will definately make it again!

These had good flavor, the only thing I will do next time is spice the meat up a bit more. They reheated well, also.

Great flavor. We really like it although next time I think I will add a little tomato sauce to the meat mixture. It was a little dry. I also doubled the salsa.
