Original recipe yields 56 cookies

Directions

  1. Preheat an oven to 375 degrees F (190 degrees C). Grease 2 baking sheets.
  2. Stir the flour, oats, baking powder, cinnamon, nutmeg, pumpkin pie spice, ginger, and salt in a bowl.
  3. Beat the butter and brown sugar with an electric mixer in a large bowl until smooth. Add 1 egg and allow it to blend into the mixture before adding the other along with the vanilla. Add the pumpkin and apple butter; continue beating. Mix in the flour mixture until just incorporated. Fold in the walnuts, mixing just enough to evenly combine. Drop spoonfuls of the dough 2 inches apart onto the prepared baking sheets.
  4. Bake in the preheated oven until the edges are golden, about 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

Yummy, moist and healthy! I didn't have apple butter so per another user's suggestion, I used applesauce instead. These turned out great! The spices are just the right amount. And only 1 point if you're a WW person :)

These were pretty good. I made half of the batch with nuts, the other without. I personally liked them better without the nuts, but that's just because I'm not a big fan of walnuts. I really liked the fluffy texture. These are lightly, not overly spiced. For some reason every time I make pumpkin cookies I have an allergic skin reaction so I have to wear latex gloves :-P Edit: Beware! These cookies get very sticky on the surface after a while. It doesn't affect the taste, but it is kind of weird.

I thought they were pretty good, but they were kind of mushy on the inside. I would add a minute to the bake time, but besides that, they were fine.
