  1. Puree avocado in a blender or food processor until smooth. Sautee chopped shallots in olive oil until tender but not brown; set aside to cool.
  2. In a large bowl, whisk together avocado with chicken stock, heavy cream and shallots until smooth. Stir in salt, pepper and nutmeg; adjust seasonings to taste.
  3. Chill for at least half an hour before serving. Garnish with diced tomato.

I was so looking forward to this I made it in the winter months and was pleased. No changes made on a good blend of flavor.

I love avocados but this just wasn't what I thought it would be, I really didn't like this at all.

It lived up to it's name as avocado soup but was very rich and very filling. I was quite skeptical of a cold soup but it turned out alright. For being a "summer soup" it was a little too heavy.

This was wonderful, even my husband who was not thrilled about the idea loved this soup. I liked it room temp and cold.
