Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place chicken in two 9x13 inch baking dishes. Blend garlic and mint leaves and spread mixture under skin of chicken pieces.
  3. In a small saucepan, heat butter, lemon juice and honey over medium low heat; mix well. Brush warmed mixture all over chicken skin.
  4. Bake for 1 hour, or until golden brown and cooked through (juices run clear). Brush again with honey mixture, and serve.

I found that the wings were not quite done at 1 hour so I cooked them another 15 minutes. Could be differences in oven temps.

We started doing this recipe on boneless/skinless chicken breasts and it's one of our favorites now. Thanks for a great recipe!

YUM YUM YUM. I just cooked the wings and dripped honey over them after they were done and put a fresh mint leaf on top. It was absolutely wonderful...
