Original recipe yields 4 servings

Directions

  1. Combine shrimp, 2 tablespoons lime juice, garlic and salt in large bowl. Cover and marinate in refrigerator 15 minutes.
  2. Meanwhile, blend sour cream, remaining 1 teaspoon lime juice, hot pepper sauce and lime peel in small bowl; set aside.
  3. Remove shrimp from marinade, discarding marinade. Heat olive oil in 12-inch nonstick skillet over medium-high heat and cook shrimp, stirring occasionally, 4 minutes or until shrimp turn pink. To serve, arrange shrimp and prepared Knorr® Fiesta Sides™ - Spanish Rice on a serving platter. Serve with sour cream mixture, lime wedges and sprinkle with cilantro.

Followed the recipe close but when it came to arranging it on Spanish rice- no urge there so used it as a topping for baked potatoes and to keep the tomato in it tossed in a small handful of grape tomatoes that I split and sautĂ©ed in pepper oil. This is a dish you have to make your own, but when you do, it will be something to come back to again and again."
