Original recipe yields 8 servings

Directions

  1. Place pineapple with juice in microwave-safe medium bowl. Microwave on HIGH for 1 minute. Add both flavors gelatin powder and stir for 1 minute or until dissolved. Chill 15 minutes.
  2. Stir in preserves. Fold in 2 cups whipped topping. Chill for 1 hour or until firm.
  3. Serve in small custard cups topped with a dollop of whipped topping.

I substituted strawberry jello for lemon, raspberry jelly for apricot and added mandarin oranges. I also doubled the recipe, but found 1 jar of jelly was still plenty. It was delicious and a big hit at my Church potluck!

I made this today and it was a hit. It was easy to make and not a big clean up at all. I wanna try making it again with different flavors.Once I do it I will post flavors and how it came out.
