Directions

  1. Heat Dutch oven with 1/2 tsp of oil to coat and saute chicken sausage until browned and internal heat is 165 degrees. Remove from pan and slice into small pieces and set aside.
  2. Meanwhile, finely mince the garlic cloves.
  3. Heat remaining oil in pan, add garlic and saute for 30 seconds, stir in wine and broth and bring to a boil. Cook for about 2 minutes then add tortellini. Cook for another 5 minutes and then stir in spinach and tomato. Cook until the spinach wilts, 2 minutes.
  4. Return sauteed sausage pieces to the soup, cook for an additional 5 minutes add the butter and serve when butter is melted.

This is perfect for a chilly night and a movie. It's great as is, but I prefer heartier and spicy meals, so I add sliced carrots, mushrooms, diced onion and seasonings (sea salt, black pepper, basil and dried Mexico Chile pepper).

This was the best tasting soup I have ever made!!! I even cheated by using a can of diced tomatoes and it was still amazing!!!!

Easy, economical, and delicious. I used a 13 ounce bag of frozen tortellini(plus an extra cup of water), a can of diced tomatoes in place of fresh, and 10 ounces of fresh spinach roughly chopped. Big, big hit.
