“For an elegant dinner or easy family meal, this dish will be a hit. The subtle orange flavor of the rice blends perfectly with the chicken. Toasted almonds complete the perfect combination of textures.”

  1. Combine rice, orange juice, water and salt in a 2- to 3-quart saucepan. Heat to boiling; stir once or twice. Reduce heat; cover and simmer 15 minutes.
  2. While rice is cooking, melt 1 tablespoon butter in large skillet over medium-high heat. Add almonds and cook and stir until golden, about 2 to 3 minutes. Remove almonds and set aside.
  3. Melt remaining 2 tablespoons butter in skillet. Add chicken; cook until brown on both sides. Add orange marmalade to skillet and stir to coat chicken. To serve, spoon rice onto plate, top with chicken. Sprinkle with toasted almonds and green onions.

Made this last night...turned out really well! Great flavor and the Texmati rice was a nice compliment! My husband went back for seconds...and thirds!

I really enjoy this recepie, it's really good. I didn't make any changes.

This is something I used to make all the time, and for some reason forgot all about it. Many thanks for reminding me. It is one of the best chicken dishes around. The only change I make is to add a heaping teaspoon of red pepper flakes. The combo of sweet and hot is addictive! I would also suggest that you use a not so sweet marmalade, like the kinds from Europe.
