Directions

  1. Preheat oven to 375 degrees F. Place chicken on cutting board. Holding sharp knife horizontal to board, cut a 3-inch deep pocket lengthwise in the thick side of each breast.
  2. Place 2 basil leaves on each slice of mozzarella, then sprinkle with salt and pepper. Stuff each breast pocket with a cheese bundle. Wrap 2 slices prosciutto around each breast, anchoring with toothpicks.
  3. Heat oil in large oven-proof nonstick skillet over medium-high. Add chicken and cook about 3 minutes on each side or until browned. Transfer chicken in skillet to oven; bake 12 minutes or until done (internal temp 170 degrees F).

I've made these twice now, and they are a hit with the family. I also use fresh chicken breasts, and I add a nice chunk of fresh mozzarella instead of sliced and extra basil. If I don't have prosciutto, I just wrap with regular bacon, and this last time, I covered them with a simple maple glaze about 5 minutes before they were finished in the oven - wonderful!! Also, I don't pan fry first, just prepare and pop them in the oven!

This was very good!! I've had a version of this before with another cheese, but the mozzarella was great! I used fresh mozz., not deli slices. Next time I would add on more cheese. Very easy and fast, but elegant. Thanks for the recipe!

This dish was super easy and delicious. We used regular chicken breasts and seasoned with salt and pepper.
