“Famous Western Pennsylvania Ham Loaf. Perfect way to use up left over smoked ham after Christmas or Easter. Be sure to serve it with a generous amount of sauce. We use a hand-held meat grinder that belonged to my husband's great-grandmother - doesn't take long and is somewhat nostalgic. ” - by Saylor Mom

Original recipe yields 2 ham loaves with sauce

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Line a large baking sheet or jellyroll pan with parchment paper.
  2. In a large bowl, mix the smoked ham and ground pork together until thoroughly mixed, and lightly mix in the graham crackers, evaporated milk, and eggs. Form the mixture into two loaves, and place the loaves onto the prepared baking sheet.
  3. In a saucepan over medium-low heat, whisk together the tomato soup, brown sugar, vinegar, water, and dry mustard until well combined. Bring the mixture to a boil, stirring to dissolve the brown sugar. Pour about 1 cup of sauce over each ham loaf, reserving remaining sauce.
  4. Bake in the preheated oven for 2 hours. Slice and serve with reserved sauce.

It seems a bit wet when you put it in the pan, but it gets very firm & the moisture is necessary."

"Exactly the recipe I was looking for. This is authentic PA Dutch, just like my Gram used to make. The big difference between this and other recipes is the graham crackers. I skipped the tomato soup..." See more though, and added some pineapple juice to the topping. I then put some pineapples on top the loaf while it bakes....yum!"

"I wish I could have liked this...I was looking for something different for the family, followed the directions to a T and this was an absolute catastrophe. I can't explain the very odd taste and the ..." See moretexture was grainy and terrible... the only bonus was the sauce (hence the single star.) My family had to drown their ham loaf in sauce to choke it down...I'm sorry; will not be making again."
