  1. In a large bowl, stir together pancake mix and cinnamon. Make a well in the center of the pancake mix. Add the eggs, applesauce, lemon juice and milk; stir until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Okay pancakes; I might make these again. I read the reviews before making them and the only things I would say is that if you're like me and you have the "just add water" kind of pancake mixes (...

One of the reviewers gave the most helpful tip: Do NOT use a "just add water" pancake mix. Use a "real" pancake mix. Also, the lemon juice makes a big difference, IMO.

My kids really liked these. We used cinnamon applesauce, left out the lemon juice (didn't have any) and used Krusteaz Buttermilk mix. I did add just a little extra milk to make up for not usin...
