  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Center each piece of fish on an individual piece of aluminum foil (large enough to enclose the fish when folded). Sprinkle each piece of fish with salt and pepper. Divide the sliced tomatoes, onion, and red and yellow peppers between the 6 pieces of fish, and place on top of the fillets. Sprinkle evenly with the capers and parsley. Drizzle each fillet with 1 tablespoon of olive oil and 1 tablespoon of lemon juice.
  3. Fold and seal the foil into a packet and place on a baking sheet. Leave 2 inches between each packet for even cooking.
  4. Bake in preheated oven for 20 minutes.
  5. Let rest for 5 minutes and unwrap. One packet per person.

I'm not a fan of foil pouch cooking, so I put this in individual oval baking dishes and covered them tightly with foil. I used larger pieces of halibut instead of the haddock, and used a combin...

My wife is a fish eater and somewhat picky. This most definitely met her standards. I had roasted tomatoes and peppers at hand and I think this improved the flavor. The simplicity of preparation...

DELICIOUS!!! Incredibly flavorful and colorful. The fish just flaked and melted in our mouths. I will reduce the amount of olive oil and lemon juice next time, though so as not to have the ju...

I made this and it was great - tremendous . I am a guy and like a more manly dish , so I used thick cod filets - about 6 oz each. I rinsed the capers to make them a bit more mild based on so...
