Directions

  1. Combine the baby greens, mango, watermelon, mint, feta cheese, and minced onion in a mixing bowl. Whisk the vinegar, olive oil, and mango juice concentrate together in a small bowl, and pour over the salad. Toss gently to evenly coat.

This was delicious! I added some orange juice to the vinaigrette to balance everything out. Really like it, and I'll definitely be making this again!

This was sooooo good. I just used orange juice for the dressing and also only put the dressing on everything else but the greens. I also made about 2x the dressing just cause we like lots of flavour. Anyway, so tasty, everyone loved it.

This was amazingly good! I found a Marzetti White Balsamic Vinagerette so used 1/2 c.and just added 1 TBS. Apricot Nectar. Didn't need to pour all the dressing on. got raves from our guest! Now I need to go back to the store cause I'm craving it today! Make it for your summer meal! Made this again and it is sooo awesome! My all time favorite summer salad. More people should try it. Guests love it!
