"This recipe was handed down to me by my mother. It was always my favorite potato salad--so unlike any other I have ever tried. The creamy texture of the cottage cheese makes this potato salad a hit whenever I serve it!"

  1. Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink. Peel once cold.
  2. Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Rinse the potatoes in cold water, and allow to cool. Slice the cooled potatoes into a large salad bowl.
  3. Chop 2 hard-cooked eggs into the bowl with the potatoes, and mix in the celery, radishes, green pepper, and green onion. Stir together the cottage cheese and mayonnaise in a bowl, and pour over the potato mixture. Toss lightly to combine, and season to taste with salt and pepper. Slice the remaining hard-cooked egg, arrange the slices on top of the salad for a garnish, and sprinkle with black olives.

Footnotes

  • Cook's Note
  • I usually stir in the third egg (which I chop) and the sliced olives, and just sprinkle a bit of paprika on as a garnish.

Absolutely fabulous..The only changes that I made was that I used 1/2 yellow onion (only because I didn't have green onions), and I mixed an entire can of blcak olives into the salad. Delicious...

This potato salad is absolutely delish---a refreshing change of pace from more traditional recipes.

This was really good, my sister raved about it and forced me to leave my leftover with her. Asked her what she thought and she said it was "clean" which is interesting that she mimicked another ...

This is a very good potato salad, with a very different dressing. I'm used to a dressing that has vinegar and sugar in the ingredients, so what I noticed most was it lacked a "tangy sweetness"....

ABSOLUTELY WONDERFUL! WILL DEFINATELY MAKE AGAIN! YUMMY!

Hmmm...just OK. Very bland for me. I left out the olives because I didn't have any and maybe that would have given me more flavor. I think what I was missing though was mustard and cheese! G...

I love this just as it is written, no need to alter. It's light and oh so yummy. I did mix the "sauce and seasonings" thoroughly in a separate bowl before adding them to the other ingredients. T...

Wonderful! Super-easy to make. I left out the radishes, peppers and olives because I'm not a fan and threw in a little apple cider vinegar to spice things up a bit, took it to a party, and it wa...

FINALLY - I made a potato salad that didn’t dry out! Next time I may add some bacon.
