My father-in-law is known for his Sunday breakfasts. Homemade sausage, fluffy eggs and tender fried potatoes and onions...yum. My kids loved spending time at Gramma's and Grampa's farm with the horses and other animals, and always came home talking about breakfast -- which was normally served well after 11 a.m.! (I have mixed all the ingredients together and fried right away -- tastes great, but don't tell Grampa!)

Directions

  1. In a bowl, thoroughly mix together the turkey, coriander, salt, brown sugar, black pepper, and cayenne pepper. Cover the bowl, and refrigerate the sausage overnight.
  2. The next day, heat olive oil in a skillet over medium heat. Form the sausage into thin patties, and fry until browned and no longer pink inside, 2 to 5 minutes per side.

This was so easy to do. I give GRANDPA an A+ So tasty too. Ijust made a green salad bowl and white rice with it, and we all enjoyed it. CONGRATULATIONS GRANDPA!! <3 <3

Hooray for Grampa! I make this now so often I have the recipe memorized. I use it for turkey burgers. A great addition is to chop some fresh basil and mix that up in there too. And, yes, it still tastes great if you cook it and eat it right away!

I have been trying to cook healthier, but wanted a heartier breakfast sometime, and I came across this recipe. I had 1 lb of ground turkey in the fridge, so it was perfect. It tasted pretty close to what I know as sausage, but boy was it peppery! When I measured out the spices I tried to use level spoons of the spices, because I was worried about all the pepper, red and black. To make even sized patties, I used a 1 tablespoon cookie scoop and did 2 scoops per patty and made 10. I am not sure how to change this, with the pepper. It might be just me, but whenever I have bought store bought patties I always bought the maple brown sugar sausage patties, if they have them. I may just like a sweeter breakfast sausage. But, they all got eaten.
