“A delicious and easy change of pace from the regular side dish. Chayote is a squash and tastes somewhat like zucchini. You can use green or white chayote. Add spice if desired, jalapeno is delicious.”

Directions

  1. Preheat an oven to 400 degrees F (200 degrees C).
  2. Place the chayote into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 15 minutes. Drain and chop the chayote. Set aside.
  3. Heat the butter in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the chopped chayote, and season with salt and pepper. Break the eggs over the chayote mixture, and reduce heat to low. Cook and stir until the eggs have set, 3 to 4 minutes. Transfer the mixture to a baking dish and top with American cheese.
  4. Bake in the preheated oven until the cheese has melted, about 5 minutes.

I omitted the eggs and made this as a side dish for dinner. It was somewhat bland for our taste and the chayote softer than we would have liked, which would have been fine for breakfast. I will make it again and substitute pepperjack cheese and boiling the chayote for 10 minutes or less. Or I might add sharp cheddar and a diced jalapeno. This is a great jumping off point for learning how to use chayote.

Thought this was delish! I swapped the American for cheddar cheese but do think pepper jack would be yummy too. It reminded me of a cross between a hash and omelette, although the onion made it taste sweeter (vidalia). Would definitely make it again.
