Directions

  1. Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Allow to cool, then slice each sweet potato into wedges. Arrange wedges on a baking sheet.
  2. Preheat an oven to 400 degrees F (200 degrees C).
  3. Brush the sweet potato wedges with olive oil, and lightly season with salt and pepper. Combine sea salt, lime zest, chili powder, paprika, and crushed red pepper flakes in a small bowl.
  4. Bake in the preheated oven until golden brown on all sides, about 20 minutes. Plate and sprinkle with the seasoning mixture and cilantro immediately.

"NOTE FROM RECIPE MAKER: When submitted, my instructions said to "boil till fork tender". Allrecipes added to that sentence "about 20 minutes". Now that I have see two reviews stating the fries/wedges ..." See moreare too "mushy" I am thinking cooks are boiling for 20 minutes and not until fork tender. If you boil till fork tender, the "mushy" quality should hopefully not be an issue. Remember, recipes are a guideline to discovering what you like best. So learn, practice, experiment, and don't be afraid to mess. Happy Cooking!"
