Directions

  1. Combine the turkey drumsticks and water in a large soup pot and bring to a boil. Stir in onions, carrots, celery, garlic, salt, black pepper, sage, thyme, rosemary, and celery salt; reduce heat to a simmer. Cook until the turkey meat is very tender, about 2 hours. Remove the turkey drumsticks and allow to cool. When cool enough to handle, strip the meat from the bones and tendons, chop the meat, and return to the soup.
  2. Fill a large pot with lightly salted water and bring to a rolling boil. Cook the egg noodles a boil until cooked through yet firm to the bite, about 5 minutes. Drain. Scoop noodles into soup bowls and fill the bowls with turkey soup.

"Oh. My. Goodness. Did everyone's "old man" make this after every Thanksgiving? Mine didn't but I learned from my father in law how to make this. He always boiled down the turkey carcass and used the "..." See morejuice" from that and pieced out the bones from the meat and added more chopped leftover turkey and he added a cup or so of leftover turkey gravy, a little worchestershire and a couple bay leaves. (He didn't add that much salt, but he did add quite a bit. I only season to taste because I'm not a big salter of food.) It's one of my husband's favorite parts of Thanksgiving and now that my father in law has been gone for almost five years, I make this for my husband and boys and we reminisce over our favorite memories of him. Thanks for posting this recipe, it's such a wonderful recipe that I'm sure is not just a family tradition for only our family."
