Original recipe yields 1 dozen muffins

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners. Whisk the flour, baking soda, and salt together in a bowl; set aside.
  2. Beat the bananas, butter, and sugar with an electric mixer in a large bowl until smooth. Beat in the egg, vanilla extract, and whiskey. Mix in the flour mixture until just incorporated. Fold in the coconut and chocolate chips, mixing just enough to evenly combine. Pour into muffin pan.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Oh my heck, after I giggled about twenty minutes over the title of this recipe, I got to work. I followed this recipe as close as I could, adding a teaspoon of baking powder and I used whole wheat white flour. I thought these were good, though next time I'd add some chopped pecans or walnuts and maybe some cinnamon or nutmeg next time. I didn't like the chocolate chips, though my kids and husband did. I'd like to try Hershey's cinnamon chips in this recipe next time. Quite tasty and they smell amazing while baking! Thanks for the laughs......and a new banana muffin recipe!

AMAZING! My husband took them to his friends who couldn't stop raving about them! You can barely taste the Jack Daniel's, it's just a tiny kick. I also added 1/2 cup of walnuts. YUMMY!
