"This is my favorite recipe for pancakes. Over time I tweaked a recipe I found, till i got it just right! It makes fluffy pancakes with that little bit of extra from the vanilla and cinnamon! These pancakes are especially good with your favorite berry syrup."

  1. Whisk together flour, sugar, baking powder, cinnamon, and salt in a bowl. Whisk in the milk, egg, 3 tablespoons vegetable oil, and vanilla extract until only a few lumps remain. Let the batter stand for 5 full minutes for extra fluffiness.
  2. Heat a skillet or griddle over medium heat, and brush with 1 teaspoon vegetable oil. When the oil shimmers, slowly pour about 1/4 cup of batter into the hot pan. Cook until bottom is browned, about 2 minutes, then flip and cook until the center of the pancake is set and the other side is browned, about 2 more minutes. Keep warm until serving.

Great recipe for "Extra-Yummy" Pancakes with a nice touch of cinnamon! I used only two tsp. of cinnamon vs. a full Tbsp. and added a full tsp. of vanilla for good measure. Also, letting the batt...

When I read the recipe and it asked for 1 tablespoon of cinnamon I admit I did a double-take. However, as this is a new recipe that hadn’t been reviewed often I made the recipe exactly as state...

Light and fluffy, the five minute waiting time is really important to remember. They turned out great!

These were outstanding. The family LOVED them. I did a double take when I saw the amount of cinnamon. I ended up only using 1/2 Tbs and that was PLENTY. They turned out a lot fluffier than I tho...

Absolutely extra-yummy and fluffy! I used whole wheat white flour and "soured" milk (milk soured with lemon juice). I did only use a heaping teaspoon of cinnamon only because I didn't want that ...

Very nice, light and fluffy. The flavor was wonderful! I will deff. make these again, they are wonderful!!

very good. I left out the oil and they were still very good. I will try them with apple sauce next time.

I followed the recipe exactly and these were fabulous. Lots of cinnamon and vanilla make these unique and wonderful!

I made these this morning for my husband. They were good. I used 2tsp of Cin. like others suggested and it was still a little too much. Next time I will use less.
