Directions

  1. Whisk together flour and oil in heavy 6-quart sauce pot over medium-high heat 4 to 5 minutes or until smooth and lightly browned. Stir in Cajun seasoning; cook 1 minute.
  2. Add tomatoes with juice, thyme and garlic; bring to boil. Reduce heat; simmer 5 minutes. Add salad; cook stirring 1 to 2 minutes. Add shrimp; cook, stirring, until heated through. Season with pepper, to taste.

This was wonderful! I used collards instead of the Seven Lettuces, and added a Bay leaf, but otherwise kept it the same. We served it over brown and wild rice in a bowl. Except for my daughter who doesn't like spicy things, this was a family hit. Will definately make again soon.

I added scallops and rice to this recipe, but left the seasoning the same. It was delicious and very easy to make!
