Original recipe yields 4 to 6 servings
Directions
- Preheat oven to 250 degrees F (120 degrees C).
- In a saucepan bring 2 cups of water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
- To the cooked rice add cheese, onion, eggs and butter. Mix well and gently stir in parsley and milk. Transfer to a 2 quart casserole dish.
- Bake in preheated oven for 1 1/2 hours.

"Not bad, but definitely needs something added. I added extra cheese to the leftover dish and it made a huge difference (needed salt, I guess). I also increased the cooking temp to 350 and cooked for..." See more half the time...much better. Be sure to add a few extra tablespoons of liquid though...so that it doesn't dry out."
