Based on a 2,000 calorie diet


  1. Preheat oven to 350 degrees F (180 degrees C). Heat oil in a skillet set over medium-high heat. Cook onion, celery and pepper until softened, about 5 minutes. Stir in ketchup. Remove pan from heat and divide sauce mixture in half.
  2. Combine one half of the sauce with ground beef, breadcrumbs, egg, salt and pepper. Mix gently. Pat mixture into a lightly greased 9-x 5-in (2 L) loaf pan. Bake for 1 hour or until an instant read thermometer reaches 160 degrees F (70 degrees C).
  3. Rest for 5 minutes. Reheat the reserved sauce mixture. Slice meat loaf and serve with sauce.

my favorite meatloaf recipe to date!


I've never been a big fan of meatloaf but I LOVE this recipe! I don't care for celery and my boyfriend doesn't like onions so I just sauté green and red peppers and chopped up jalapeño peppers (for a little kick) in the ketchup sauce. I also use the whole sauce to mix in with the meat rather than just half of it, along with meat loaf seasoning. All this makes for a very flavorful and moist loaf that you don't really need to put anything on it. Another trick of mine is to use the royal Hawaiian sweet rolls for the bread crumbs. The sweetness of the rolls really compliments the spicy and saltiness. Also tried this recipe with ground turkey, tastes awesome.
