“Quite a lot like hush puppies, but made with grated summer squash. The squash makes them moist and tender on the inside, and the cornmeal mix makes them crisp and brown on the outside. These are delicious with fish (of course), chicken, and other grilled meats.”

Original recipe yields 12 fritters

Directions

  1. In a bowl, mix the egg, cornmeal mix, squash, onion, onion powder, salt, and black pepper until thoroughly combined (mixture may seem a little dry).
  2. Heat the peanut oil in a large skillet over medium-high heat, and drop the squash mixture by large spoonfuls into the hot oil to form patties. Cook until brown on both sides, 2 to 3 minutes per side.

Very dry and crumbly as recipe is written. The size of the egg +/or squash may have made a difference, but I was happier by adding 1/4 cup of water to the mixture. Next time I will be adding herbs +/or hot sauce for more flavor! This is a great starter recipe that can be altered to please the tastes of those who try this!

Yum! I used a small summer squash and grapeseed oil instead of peanut oil. They had just the right amount of moisture and tasted great. Will definitely make again!
