Original recipe yields 9 cups

Directions

  1. In a large bowl, combine yogurt, vinegar, mayonnaise, parmesan, and parsley; mix well.
  2. Add remaining ingredients, and toss to coat. Serve immediately with croutons if desired.

I wouldn't call the dressing for this salad "dressing" as it was quite thick and more "dip" like in consistancy. I did use some milk to think it down and even then, I didn't use all the dressing because there was quite a bit. We liked the combination of vegetables. Next time, I'd throw some spices in the dressing and increase the red pepper. NOTE: This served four, not six.

Great salad! A nice assortment of colorful veggies paired with a light, creamy dressing that's not overpowering. I added some olives and croutons to the salad and to the dressing I added a little minced garlic. Very tasty!

This salad is fresh and delicious and quick to put together. The only chage I made was to add about a tablespoon of olive oil to the dressing because it was very thick. Thanks very much!
