  1. In a bowl, mix together the sage, rosemary, thyme, fennel seed, sugar, bay leaf, and salt until thoroughly combined. Rub both sides of the pork chops with the herb mixture, and coat them with olive oil. Refrigerate several hours or overnight.
  2. Preheat an outdoor grill for medium heat, and lightly oil the grate.
  3. Grill the chops until they are browned, show good grill marks, and the meat is no longer pink inside, about 4 minutes per side. An instant-read meat thermometer inserted into the thickest part of a chop should read at least 145 degrees F (63 degrees C).

  • Cook's Note
  • To broil, after Step 1, preheat a broiler, and move an oven rack 4 inches beneath the heat source. Place chops onto a broiler pan, and broil until browned and the edges are crisp, about 4 minutes per side. An instant-read meat thermometer inserted into the thickest part of a chop should read at least 160 degrees F (70 degrees C).

I've noticed that the reviewers who only give this a 4-star rating each left off one ingredient. This is one of the few recipes i would never change - the salt is essential for flavor, and the sugar is essential for both flavor and crisping the edges. Still, reviews aren't bad! Thanks, and also thanks for the pic - i don't have a camera.

Occasional Cooker

My husband and I both liked this pork and the spice combination. I left out the salt and sugar but it was delicious without them. I marinated them for about 3 hours. Since our grill died, I sauteed the boneless pork loin chops for a couple of minutes on each side to brown and then put them in a baking dish with a little chicken broth and baked them at 350 for about 30 minutes. I would make this again. Thank you Stormy3600 for sharing the recipe.


Any time my husband ooohs and aaahs over my dinner, I HAVE to give the recipe a 5! So there you are! We really did enjoy this. I did cut the recipe in half because there were just the two of us. I made the rub exactly as stated in the recipe and put them and the olive oil on my bone-in pork chops about 8 hours before grilling them, and they were really good! Thanks for the recipe, Stormy!
