Original recipe yields 1 9x13-inch pan

Directions

  1. Prepare noodles according to package directions; drain and set aside. Saute Italian sausage, onion and garlic in a skillet until sausage is browned; drain. Add pasta sauce to the sausage mixture and set aside. In a medium bowl, blend ricotta cheese, egg and 1/4 cup of Parmesan cheese and set aside.
  2. Coat a 9-inch x 13-inch baking dish with non-stick spray and spread 1 cup of the sauce mixture on the bottom. Top with 3 lasagna noodles. Spread 1/4 cup of the ricotta cheese mixture on the noodles and layer on 1 cup of the sauce mixture. Sprinkle 1 cup of the spinach and 1/2 cup mozzarella cheese. Repeat this whole process 3 more times starting with the noodles; top with 1/4 cup Parmesan cheese to finish.
  3. Bake uncovered in a 350 degrees F oven for 45 minutes until hot and bubbly. Let stand 10 minutes before cutting.

"Good recipe but needs a few modifications. First, since it calls for 2lbs of sausage, you need to either double up on sauce or just use 1lb of sausage. If you make the sauce as the recipe calls for ..." See moreit, you will end up with lots of sausage but not enough red sauce. I used 1lb of mild sausage & 1lb of italian sausage with a 45oz jar of pasta sauce. To the sauce, I also added oregano. The sauce turned out great! The ricotta cheese mixture is good as is, but I simply added a tad each of salt, pepper, & oregano. This recipe made a huge dish of lasagna that was wonderful!!"
