Original recipe yields 6 servings

Directions

  1. Whisk together the vinegar, olive oil, water, and Italian dressing mix in a bowl. Stir in the chicken; allow chicken to marinate while preparing the remaining ingredients.
  2. Heat the butter in a skillet over medium-high heat. Stir in the onion and bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Remove the the chicken from the marinade using a slotted spoon, and transfer to the skillet; reserve the remaining marinade. Cook and stir the chicken until no longer pink in the center, 3 to 5 minutes.
  3. Stir in the mushrooms; cook and stir until they begin to soften, about 2 minutes. Add tomato and reserved marinade, then sprinkle cheese on top. Do not stir. Cover and simmer on low heat until cheese is melted and chicken is tender, about 20 minutes. Allow the dish to rest for a few minutes before serving.

"Hi, this is my recipe. Can't believe it is finally posted here after all this time. Thank you for the positive reviews. I have to agree with the comments about the cooking times. I let it saute 3-..." See more4 mins. after adding the tomato. Also, don't know where the crimini came from, I usually use baby bella or white button. Also, I read another review commenting of being bland and the chicken being dry. I have to say after making this so many times that the taste of the marinade is goiing to determine the taste of this dish so be sure to use a good vinegar and I think 1/4 cup of water is too much, the recipe was posted with 2 tablespoons of water. Quality of the chicken will determine if it is dry."
