Bagels are bigger than breakfast! We use them to make a flavorful roast beef sandwich, accented with hummus, roasted peppers, onion and arugula. Now that's a sandwich!

Based on a 2,000 calorie diet


  1. Spread 1 1/2 teaspoons hummus on each bagel half. Divide the beef, pepper strips, onion and arugula between 2 bagel halves. Top with the remaining bagel halves.
  2. Cut each bagel into 8 "bites" and secure with toothpicks.

Delicious sandwich with a wonderful Mediterranean flair! You could easily use pita or bagels - whatever you have on hand to make these little treats. I used "Hummus IV" from this site and added a little feta cheese. I chose not to cut these up, but rather my husband and I ate them as sandwiches. Very easy and very filling!
