Based on a 2,000 calorie diet


  1. In a large skillet, heat oil; stir-fry vegetables until crisp-tender. Add sausage and pineapple; cook and stir until heated through. In a small bowl, combine water, cornstarch, soy sauce, sugar and reserved pineapple juice.
  2. Add to skillet; bring to a boil, stirring constantly until thickened, about 2 minutes. Serve immediately over rice.

You can also just use regular sausage. thats what im doing:]


First I prepared the long grain brown rice. My bag of frozen stir fry seemed skimpy for five servings so I added a can of rinsed and drained water chestnuts. As a e result, the sweet and sour sauce was too thin so I made more sauce using the Sweet and Sour Sauce I on this website. Delicious and freezes well. Next time, I would use two bags of veggies for all the sausages.


The family loved the combination, especially the sausage and pineapple. However, they felt the brown rice had no flavor, so maybe next time I'll make white. Maybe the kids are used to that. I will make this recipe again!
