Original recipe yields 10 servings

Directions

  1. Heat the oil in a large skillet over medium heat. Cook and stir the cubed yams in the hot oil until fork-tender, 7 to 10 minutes. Add the cauliflower and diced jalapeno pepper to the yams; continue cooking until the cauliflower begins to soften, 10 to 15 minutes more.
  2. Combine the coconut milk, water, and cannellini beans in a stockpot over medium-high heat. Stir the basil, 1 tablespoon of soy sauce, mustard powder, coriander, smoked paprika, ground ginger, cardamom, turmeric, bay leaf, and cinnamon stick into the bean mixture. Season the soup with salt and black pepper. Bring the soup to a boil, add the yam mixture, reduce heat to low, and simmer until the cauliflower is tender, 30 to 45 minutes. Garnish with the parsley, drizzle with 1 teaspoon of soy sauce, and sprinkle with goat cheese to serve.

First, I halved this recipe since the numb..." See moreer being served was only two people and 10 servings seemed a bit silly, and when I did so I noted that there didn't seem to be nearly enough liquid for the amount of vegetables in this dish. It's hard to imagine how it would be different if I'd doubled everything. Fortunately I was able to simply add more coconut milk & water to bring the ratio to a reasonable amount (and to compensate I added more spices, halved yet again). This seemed to rescue the dish quite well. So at a minimum, if you're halving the recipe be cautious and keep the ingredients on hand. Secondly, the name; you've got to change the name. "Allergy Friendly Comfort Soup" does NOT sound tasty. I wouldn't even tell my wife what the recipe was called because I was sure she'd ask me for something else. All that said, this recipe is super delish and will definitely go into our recipe box!!"
