  1. Heat oven to 375 degrees F.
  2. Add seasoning mix to chicken in medium bowl; toss to evenly coat.
  3. Heat dressing in large skillet on medium-high heat. Add chicken; cook and stir 5 min. or until evenly browned. Spoon into 1-1/2-qt. casserole; cover with layers of beans, corn, onions and salsa.
  4. Bake 20 min. Top with cheese; bake 5 min. or until melted. Serve over rice.

Very good, easy. We made our own taco seasoning from another recipe on allrecipes, don't think I will ever buy packaged taco seasoning again as I like being able to decrease amount of salt.


Southwest Chicken was great! 4 stars just because the recipe really didn't go into a whole lot of detail about the rice but hey, its rice... whats there to really figure out? Super pleased because this was a really easy dish to make that turned out tasty! Only thing I changed was the salsa, I used Chi-Chi's Salsa which was pretty darn tasty. The only problem I had was when I was tossing the seasoning mix with the chicken some of it ended up stuck to my fingers so next time I might add more to compensate for sticky fingers! Overall was a pretty great dish, easy to prep, make, and the taste was right on! Definitely saving this recipe for a later date.


I loved this recipe! I'm definitely saving and I will make this again. Note: Makes enough food for 3 adults. If you have a large family, you may need to adjust the recipe :).
