Based on a 2,000 calorie diet

Directions

  1. Cut the sausage into 1/4 thick slices.
  2. Place a large skillet over medium high heat, coat with 1 tablespoon olive oil, and cook and stir the onion for 1 minute, until just golden.
  3. Add the roasted garlic puree, stir together.
  4. Add the spicy jalapeno slices, brown on both sides, about 2 minutes.
  5. Add the asparagus, tomatoes and chick peas, toss with the sausage mix, and season with the salt, pepper and fresh basil. Reduce heat to medium, and simmer for 2 minutes with the reserved pasta liquid.
  6. Toss in the cooked pasta and heat through, for 2 more minutes.
  7. To serve, top with the mozzarella balls, and lightly drizzle with the remaining olive oil.

I thought this was a really good dish! I didn't have whole wheat pasta, so I just used regular pasta. I also omitted the chick peas because I just didn't have them. Overall a delicious dish that I will make again! Yum!!

Delicious recipe and would absolutely make this again! I was expecting the jalapeno sausage to be spicier but it's got a nice flavor. The only changes I made was that I added about a cup of chicken broth to the pan because I didn't have any pasta water (I had made pasta earlier in the day) and I added about 1/4 cup of heavy cream and it made a really nice sauce for the sausage and veggies.
