  1. Place almonds, 1 cup coconut, dates, 2 tablespoons coconut oil, and salt in a blender. Puree until ingredients form a dough.
  2. Press dough into a pie pan to form the crust.
  3. Place 2 cups strawberries, 2 cups coconut, 2 tablespoons coconut oil, and salt in a blender. Puree into a cream.
  4. Pour cream over the crust. Top with sliced strawberries. Refrigerate until cream is thickened, about 2 hours.

As a long time raw food enthusiast, I had a feeling that the coconut in the cream filling (not the crust) would cause a gritty texture; and I prefer smooth. Sure enough, another reviewer stated this to be true. Therefore, I substituted MORE strawberries, a little raw agave and more medijool dates instead of filling it up with the coconut flakes - and wha-la - a smooth, creamy texture on the inside. I also found that this recipe needed more than just a "pinch" of salt - but this may be preference. Most of my raw food pie recipes call for at least 1/4 teaspoon, though. I don't mean to downplay the recipe, because it really helped for me to follow as a basic plan in a pinch, and I am only hoping to add suggestions to other googlers looking for raw recipes!!! :-)


I loved this pie. The first time I made it. The strawberry filling was too sour and a little gritty. He second time I made it I left out the coconut in the filling and added a tablespoon of agave. It was perfect. The crust was incredible all on its own.


This is a delicious pie and is super easy and fast to make. The crust is very sweet from the dates and the filling is slightly sour from the strawberries, so it's a perfect blend.
