A super easy, raw, vegan strawberry pie! It's absolutely delicious. Feel free to add blueberries also.

Directions

  1. Place almonds, 1 cup coconut, dates, 2 tablespoons coconut oil, and salt in a blender. Puree until ingredients form a dough.
  2. Press dough into a pie pan to form the crust.
  3. Place 2 cups strawberries, 2 cups coconut, 2 tablespoons coconut oil, and salt in a blender. Puree into a cream.
  4. Pour cream over the crust. Top with sliced strawberries. Refrigerate until cream is thickened, about 2 hours.

This is a delicious pie and is super easy and fast to make. The crust is very sweet from the dates and the filling is slightly sour from the strawberries, so it's a perfect blend.

I used all raw products when making this recipe. The coconut in the filling caused the pie to have a gritty mouth feel.(I used a vitamix) The coconut also overpowered the strawberries so it didn't really taste like strawberry pie at all. I added 3 packets of stevia because the filling wasn't sweet.
