“A unique, delicious fruit salad. It is always a hit and can be served year round, from Easter to Thanksgiving. It also goes great on angel food cake! The marshmallows soak up the juice and flavor and are so good! You can add seasonal fruit you have on hand! I usually chill in the fridge 30 min before serving to let the marshmallows soak up the juice!”

Original recipe yields 8 servings

Directions

  1. Stir pudding mix and reserved liquid from mandarin oranges together in a large bowl until smooth.
  2. Stir marshmallows, banana slices, strawberry slices, kiwi slices, and pecans into the pudding mix.
  3. Chill 30 minutes before serving.

I did not have instant lemon pudding but I did have instant cheesecake pudding. I used that instead. I did add in one more cup of chopped strawberries and two more chopped kiwi. This is a very nice fluffy salad--the kids and I loved it........I can't stop eating it. This is even better if it sits overnight, if you can wait that long to dig into it.
