Directions

  1. Place cauliflower in a pot with enough water to cover. Bring to a boil and cook 10 minutes, or until tender. Drain and return cauliflower to pot.
  2. Stir butter, black pepper, salt, and garlic into cooked cauliflower.
  3. Mash cauliflower mixture with a potato masher or whisk until a smooth consistency similar to mashed potatoes.

Another great variation is to add a couple wedges of laughing cow garlic herb cheese instead of butter . it adds very little fat and calories . If you are on weight watchers as am I am it adds 2 + points per wedge

This is a great side dish. I'm on a low carb diet and this is a great replacement for potatoes. It would be good for anyone though. I even have it cold and it's still great.

Yum! (I cheated and added a little mozzarella, but it would have been perfect even without it.) Even my boys loved it.
