Original recipe yields 1 8x8-inch dish

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking dish with cooking spray.
  2. Heat olive oil in a large skillet over medium heat; cook and stir green bell pepper, onion, and celery in hot oil until onion is translucent, about 5 minutes. Stir in hot dog pieces and cook and stir until hot dogs begin to brown, 6 more minutes. Stir in the chili and heat the mixture thoroughly.
  3. Beat cornbread mix, egg, and milk in a bowl with a spoon until batter is just moistened, and spread half the cornbread batter into the prepared baking dish. Top batter with the hot dog mixture; spread remaining half of cornbread batter over the top.
  4. Bake in the preheated oven until casserole is bubbling and cornbread topping is golden brown, about 25 minutes. Let stand for 5 minutes before serving.

I made this as a last-minute dinner idea (I literally remembered at the last minute that I had nothing planned for dinner). I used red bell pepper instead of green, Angus beef hot dogs, and Campbells Chunky Roadhouse Chili. I made little bowls of chopped tomatoes, sliced green onions, shredded sharp cheddar and reduced fat sour cream to top the servings with. My family RAVED about this casserole, especially littlest who can be a little picky. My husband and oldest went back for seconds. This was fabulous--not only was it quick, it also used ingredients I had in my pantr/fridge which made it very cheap to make. This recipe's a keeper!

This was really good! Very cheap and easy. I put one package of cornbread mix on the bottom of the dish, layered the chili mixture and then topped with half a box cornbread mix. The dish really held together well. We would definitely make again, especially to use up hot dogs and veggies :)
