Original recipe yields 1 9-inch quiche

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Place pie crust on a pie pan or baking dish.
  2. Heat olive oil in a skillet over medium heat. Cook and stir onion until softened and translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more.
  3. Spread mozzarella cheese and tomatoes over the bottom of the pie crust. Whisk eggs, lemon juice, basil, salt, black pepper, and caramelized onion in a large bowl; pour mixture over cheese and tomatoes.
  4. Bake in preheated oven until eggs are set and crust is flaky, 30 to 40 minutes.

Because I couldn't get hold of any basil or mozzarell..." See morea, I instead used oregano (apparently a good basil substitute!) and parmesan. I took one of the reviews into consideration, and added lite cream to the 8 eggs for a fluffier, lighter texture. I made my own pastry and also added diced button mushrooms the second time - it turned out perfectly! The caramelized onions with the added herbs and tomatoes created such a great, heartwarming flavour, and the addition of mushrooms added just a little bit more texture to the filling. I will definitely make this again! 5 stars!"
