A great summer salad. Whenever I make it, everyone wants the recipe. This salad will be the best and crispiest if everything is prepared at the last minute.

Directions

  1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
  2. Cook and stir okra in the same skillet used for bacon until tender and browned, 10 to 15 minutes. Remove and drain on paper towels.
  3. Combine bacon, okra, tomato, green onion, and green bell pepper in a bowl.
  4. Whisk oil, sugar, and vinegar together in a microwave-safe bowl. Heat in microwave on high for 1 minute, stirring every 10 seconds, until dressing is boiling and sugar is dissolved. Pour over vegetables right before serving; toss to coat.

Made this (almost) exactly as stated and took it to a birthday dinner yesterday. Everyone loved it! I say almost because I couldn't find breaded okra, so I breaded thawed okra in about 1 c. cornmeal mixed with 1/2 c. flour and a little salt and pepper then fried till crisp, about 7 or 8 minutes. Perfect! I might add a little cayenne to the dressing next time just to kick it up a little, but it doesn't need any changes at all! Definitely a keeper!
