  1. Bring water and margarine to a boil in a saucepan; reduce heat to low and stir in long grain and wild rice mix. Cover and simmer until rice is tender, about 25 minutes. Fluff with fork and allow rice mix to cool thoroughly.
  2. Mix cooled rice mix with chicken, red onion, grapes, cashews, and mayonnaise. Serve immediately or chill before serving.

While this is great as is, to change the flavor and color up a little, add a few drops of liquid smoke to the dressing and use blueberries instead of grapes.

It seemed a litle blah to me. Wondering if it could be because I used salad dressing instead of mayonaise. I tried adding salt to the finihed product but still feel like it needed a little zin...

This is always been a hit at parties, it,s a nice heathly dish that can be use as a main dish at luncheon of friends. Add water chestnuts!!!!
