Directions

  1. Mix together almond flour, eggs, vanilla extract, cinnamon, applesauce, baking powder, and coconut milk in a bowl.
  2. Lightly oil a griddle and place over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges of pancake are dry. Flip and cook until browned on the other side. Repeat with remaining batter.
  3. Puree strawberries in a food processor until smooth. Top pancakes with pureed strawberries.
  4. All done! Now take a photo, rate it, and share your accomplishments!

These are very tasty! I did not have applesauce so I substituted a heaping tablespoon of sour cream. I know this steps away from Paleo but it is still lo carb and delicious. I ground my own blanched almonds to make almond meal, so there was some extra texture lol The vanilla and cinnamon were also omitted...this time. I will be using this recipe and experimenting further! Couldn't give it all 5 stars because I didn't follow directions to the letter.

I liked the way these turned out. I used almond milk because I didn't have any coconut milk on hand. I wasn't crazy about the strawberries with this so next time I will just skip that part and use maple syrup instead. I'm not following paleo so I'm not sure if maple syrup is allowed or not but I think it would compliment the flavors better. thanks for sharing the recipe!

I loved the recipe! Alterations; 1 c. almond meal, 1/2 c. rice flour, 1/2 c. gluten free flour, 1/2 c. of almond milk, and 5 diced peach slices.
