  1. Mix together almond flour, eggs, vanilla extract, cinnamon, applesauce, baking powder, and coconut milk in a bowl.
  2. Lightly oil a griddle and place over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges of pancake are dry. Flip and cook until browned on the other side. Repeat with remaining batter.
  3. Puree strawberries in a food processor until smooth. Top pancakes with pureed strawberries.

  • Using the almond flour, eggs, and coconut milk as a base, these can be made with any other ingredients to make them more or less sweet or savory. Keep in mind they will have a different, more dense texture than regular pancakes due to the almond flour.

I loved the recipe! Alterations; 1 c. almond meal, 1/2 c. rice flour, 1/2 c. gluten free flour, 1/2 c. of almond milk, and 5 diced peach slices.

I followed the recipe as is and they did not stay together during cooking.

I couldn't keep the pancakes together. I was able to successfully make 8 but they were pretty pathetic. Can someone help me with this?

Sadly I can't say whether these were tasty or not. The batter tasted good and I was so looking forward to eating them, but they fell apart. I finally got one pancake cooked and it was burnt. ...

I didn't change the recipe, and these were awful. It wouldn't stay together during cooking. Lumpy and bad texture. Flavor was fine, but it was like eating a pile of almond crumbs.
