Original recipe yields 1 9-inch pie

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Place sweet potatoes in an aluminum foil-lined baking dish.
  2. Bake in preheated oven until potatoes are easily pierced with a fork and skin loosens, 30 to 45 minutes. Allow potatoes to cool.
  3. Peel potatoes and mash with a potato masher in a large bowl. Beat sugar, evaporated milk, butter, corn syrup, eggs, flour, vanilla extract, apple pie spice, and salt into mashed sweet potatoes with an electric mixer until fluffy, about 5 minutes. Pour sweet potato batter into pie crust. Excess batter can be reserved for another use.
  4. Bake in preheated oven until pie is set and crust is browned, 45 to 50 minutes.

I'm the submitter of the recipe. I actually submitted this 6 years ago, and I've made some changes in how I make this now. I usually use cane syrup instead of corn syrup, and depending on how sweet my potatoes are, I cut back a bit on the sugar. The pie is not heavy on a spice flavor due to my preference (I like the sweet poatoes to take center stage), but you can certainly up the spice amount if you prefer a spicier flavor. You can also use pumpkin pie spice; I just like the apple pie spice better. I don't recommend using canned sweet potatoes as the fresh gives a much better flavor, but you can certainly use those in a pinch. As the notes states, this is a very sweet pie, and it's definitely not low calorie. Great for a thanksiving or Christmas table, because it's definitely an indulgence.

Great recipe! I made 3 pies on Thanksgiving and Im making one today! They were soo sweet and goooood! My kids, and husband loved it. This taste just like my dads recipe....from Virginia! :)
